Pheasant Italian Peasant Soup Recipe

Italian Peasant Soup (w/ pheasant) Recipe

1lb hot turkey Italian sausage, casings removed and cut into 1" pieces
1lb pheasant breast cut into 1" cubes (or chicken breast)
2 medium onions chopped
6 garlic cloves minced
2 15oz cans of cannelini beans
1 32oz box of chicken broth
1 28oz can of diced tomatoes
1 tsp dried basil
1tsp dried oregano
6 cups chopped kale
Parmesan cheese

Cook sausage in skillet until no longer pink. Place all ingredients into pot and some fat from sausage and simmer all day. Perfect recipe for the fall season.
